The Roaster Rankings — Which Coffee Roasters Produce the Best Cafes?

Everyone argues about beans. Which roaster is best. Which origin is superior. Which blend wins.

We have 600+ cafes in our database, each tagged with the roaster on its bar. So we did the maths: averaged every cafe's score by the roaster serving it. Minimum three cafes to qualify.

The results settle some arguments and start new ones.

The Roaster Leaderboard

Five Senses and Sample Coffee lead the field, averaging in the Loved band across every cafe we have visited serving their beans. Seven Miles sits solidly above average. Wolff Coffee clears 7.0. Coffee Supreme, despite appearing at more cafes than anyone else, averages 6.8.

The bottom of the table is instructive too. Some well known roasters average below 6.0 across their network. Brand recognition does not equal cup quality.

The Spread Problem

Here is the number that matters more than the average: the spread within a single roaster.

The same Coffee Supreme beans score 7.5 at one cafe and 5.8 at another. The same Wolff blend scores 7.5 at BRU CRU in Kenmore and under 6.5 elsewhere. Same beans. Same roast profile. Completely different cups.

This is the single most important finding in our roaster data. The roaster sets the ceiling. The barista decides where in the range you land. A great roaster gives you the ingredients. Only the person on the machine can deliver the cup.

This is why we review cafes, not roasters. Beans are potential. Extraction is reality.

Roaster-Operated Bars Win

The data has a clear pattern: cafes where the roaster operates the bar score higher than cafes serving someone else's beans.

Bellissimo (7.9) pulls their own roast. Industry Beans (7.5) pulls their own. Quest Coffee Roasters (8.1) pulls their own. The 8.0+ club has four out of five cafes that either roast in house or work exclusively with a single roaster.

When you control the beans from roast to cup, there are no excuses and no variables. The quality is entirely on you. That accountability shows up in the scores.

What This Means For You

Three practical takeaways.

First: check the roaster. A cafe serving Five Senses or Sample has a higher floor than average. The beans give them a head start.

Second: do not assume. A great roaster name on the hopper does not guarantee a great cup. The cafe still has to dial in, steam properly, and taste their own product.

Third: seek roaster bars. If a cafe roasts its own coffee, the odds of a good cup go up significantly. They have skin in the game that a cafe buying wholesale does not.

The roaster matters. It is just not the whole story.
